MAR 29, 21 .. CARLOS O'BRIEN'S MEXICAN RESTAURANT, PHOENIX, ARIZONA .. FOR NACHOS

Carlos is a Spanish name and it fits well for a Mexican Restaurant.

I am almost positive that there is a back-story as to why a Mexican Restaurant has a decidely Irish touch (O'Brien's) to its name.

Suffice it to say that Carlos O'Brien's, on Mayo Blvd in North Phoenix, is our favorite Mexican Restaurant here in the Phoenix Metropolitan Area. We have been visiting here since early 2017 to get nachos.

Get ready to share in our nacho-feast.

Some of the more upscale restaurants here in the Phoenix Metro Area have beautiful cactus gardens associated with them.









The time has come to step inside of Carlos O'Brien's.

Voila ! The main dining room.

This was our very first in-person live restaurant visit since last February of 2020 when the Covid-19 pandemic burst upon all of us. We felt comfortable and our Mayo covid tests have remained negtative. However, we are not planning to begin dining-out regularly.

'Our Table' is at the far end of the below aisle just inside of the entry into the main dining area. We have never ever dined at another table.



We don't need a menu! We always get nachos. The nachos come with corn chips and wonderful salsa.


I think (one time only) we specifically requested the wait staff NOT to bring the corn ships and salsa because it is all we can do to eat the nachos themselves. But they come so rapidly that we don't have time to pass on them. Yes they are also wonderful.

"Oh Patti ! How are we going to eat all of this food ?"

Now to an issue that we really try to stress when we order our nachos.

"Light on the cheese please !"

MAR 28, 21 .. SAINT PATRICK'S DAY AT FOUNTAIN HILLS, ARIZONA

 Fountain Hills, Arizona, is located on the extreme North Eastern edge of the greater Phoenix Metropolitan Area. Let's see how a Google Map link will look. Fountain Park is to the upper right in the below map.

To say that Fountain Hills, Arizona, is an exclusive town would be quite an understatement. I imagine the average income of its residents is quite significant. 

I don't know which came first, Fountain Hills or THE Fountain. Probably they arrived at the same time, back in December of 1970, because it appears to be a well designed and very modern community.

And, out there in the small lake, is THE Fountain during its idle period awaiting the top-of-the-hour to erupt. It normally goes off at the-top-of-the-hour and erupts for fifteen minutes.

And ERUPT it certainly does. Please notice that the water is usually white in color as you see below.

Below are a few facts about THE Fountain.

Please don't strain your eyes trying to read the fine print in the below photo. Immediately following it you will find a close-up photo of the details of THE Fountain.


Every Saint Patrick's Day, once at 12 o'clock noon, and once at 5pm in the late afternoon, THE Fountain erupts for forty five minutes and spouts green water. It is quite a sight and draws a nice crowd.

In the below photo, it is a little difficult to see, but the fountain is just beginning to turn green.

MAR 22, 21 .. AN AMAZING CACTUS GARDEN AT A FRIEND'S HOME HERE IN PHOENIX, ARIZONA.

 Patti and I have friends here in the greater Phoenix Metropolitan Area that we always visit when we are here. It never fails, when we get to their home, I am unable to stop taking photos of their amazing cactus plants.

So here we go with our March 20, 2021, visit to their home.

We will start by showing four views looking at their front yard. We can't call it their front lawn can we?





Now we will look at their amazing back yard.
















What you have seen in the above photos represents thirty (30) years of work.

What a joy it is to visit them.
