JAN 28, 20 .. NACHOS IN PHOENIX

After completing our Mayo Clinic medical appointments today, Patti and I stopped by and re-visited with an old friend that dates back three years to January of 2017, Carlos O'Brien's. There we enjoyed a plate of Carlos O'Brien's nachos.

 We love the exterior ambiance of the restaurant.



We really enjoy the desert scenery that surrounds the restaurant.




What an outstanding day here in Phoenix, Arizona.



Inside we enter.

When you see the order or nachos, you too will wonder why on earth they served us 'chips-and-dip' but we ate them all.

    I love the exterior of the building and the wide variety of cacti in the landscaping. It is all so nicely laid out and maintained.

    The lovely ceiling beams and everything on the interior is appealing as well.

    And then we must discuss the chips and nachos. I can understand why you and Patti are smiling and that you won't have to ever eat again.

    I'm so glad I planned for tacos for dinner this evening. I have all the ingredients waiting for me on the kitchen counter except for the meat in the refrigerator. I'll brown the lean ground beef, drain the fat and add refried beans. We'll fill hot taco shells with that mixture and top it off with sour cream, chopped fresh tomato and shredded cheddar cheese. The only thing keeping me from doing it right now is that Lon isn't home from work yet. He should get here between 4 and 4:30. We'll discuss our day over a beer and then have dinner.

      Enjoying Mexican style food myself these days. I bought a tray of Costco's chicken street tacos, complete with corn tortillas, spicy chicken, shredded cheese, shredded cabbage, salsa and a delicious creamy cilantro sauce. Twelve tacos equals six meals.

      I have ceased, I have stopped all together, having the jalapenos on nachos. Not only on nachos, but it began with my Subway Tuna Footlong Sandwiches as well. One day it was.. that-it-that for the jalapenos. And it remains thus. Smiling. Cap
